Switchin it up.

Not sure about you, but I am always trying to find a new recipe to cook or some way to do a little something different with a meal that is a staple in my house. For example, we love Chicken tacos. But do you ever just get tired of eating the same ole' thing. Even if it is one of your favorites. So tonight I decided to do a spin on Chicken tacos.
*Chicken Taco Bake*

Ingredients:
1 package Perdue ground chicken
1 package taco seasoning
1/4 diced onion
8oz egg noodles
11 oz can of corn
8 oz package of mexican cheese
8 oz Ortega taco sauce (mild or medium)
Tortilla chips
and if desired lettuce and sour cream

Steps to follow:
Heat Oven to 350 degrees.
Start water to boil for noodles. Cook noodles until tender and drain then add to casserole dish.
Brown chicken in pan over medium heat, once mostly brown add onion. Once chicken appears cooked through, add seasoning. I normally do not use a whole package of seasoning, so just add to taste. You may need to at this point add a bit of water to the pan with the chicken to keep it from drying out. I add about 2 tablesoons of tomato paste in while hot for more flavor, but you don't have to, the seasoning will do the job.
Add the Chicken in with the noodles, along with the corn, taco sauce, most of the cheese (save some for the top.) Mix this together and add crushed tortilla chips to the top, and then remainder of cheese.
Bake in oven for about 15-20 minutes.
And Wa-la!
Dinner is served. And was pretty yummy too!
I like mine with some shredded lettuce, a dolop of sour cream and a bit more taco sauce.

  2. Justin, Thanks. It is really delish. Make note though that my Husband suggested that next time we not put the tortilla chips on it. Enjoy! :)
